The sausage was originally designed as an economic means of using and preserving animal meat but this recipe is very different from the other sausage this is made of veggies that is primary source of protein like mushroom it adds an umami flavor to dishes and can replace part of the meat in recipes. Chia chaff act as a binding agent for the mixture. This is helpful for those looking to create heart-healthy meals & lower the saturated fat and cholesterol in their diets.

1Extract Chia Seeds using s2o Seed tom oil Wonder extractor.
2Then Set aside Chia oil and Chaff
1Using Misso multi Mincing Attachment , mince Shitake mushroom , carrots and garlic, scallions and repolyo. .
2In a bowl, mix minced mushroom, carrots, scallions garlic and Gluten Free All Purpose Flour. Season with salt and pepper. Then mix in Chia seed oil and chaff for flavor enhancement.
3Process the mixture using the sausage attachment. then mold into 4-inch sausage.
4Using the Breville Smart Oven Pro. Preheat the oven to 175 Deg Celsius.
5For the Garlic aioli sauce. Just mix, calamansi, miced garlic, yogurt, salt, pepper and parika. Chill.
6Place wax paper at the baking pan then line up Molden sausage mixture. Bake for 8 mins under 175 deg C. Drizzle with Garlic Aioli sauce and chopped parsley.
